Simple Pineapple Upside-Down Cake Recipe
The recipe we entered in the fair was a from scratch variation, that we won’t share until it’s perfected! In the meantime, enjoy our Simple Pineapple Upside-Down Cake recipe is super simple—perfect for making with kids. Here’s how we did it:
Ingredients:
- 1/4 cup butter (or margarine)
- 1 cup packed brown sugar
- 1 can (20 oz) sliced pineapple in juice, drained (reserve juice)
- Maraschino cherries (without stems)
- 1 box yellow cake mix
- 1 cup pineapple juice (from the can) or water
- 1/3 cup vegetable oil
- 3 eggs
Instructions:
- Prepare the Pan: Start by melting the butter in a 9-inch round cake pan in the oven at 350°F (about 3-5 minutes). Once melted, remove from the oven and sprinkle the brown sugar evenly over the butter.
- Arrange the Pineapple and Cherries: Place the pineapple slices on the brown sugar mixture, arranging them in a circular pattern. Pop a cherry in the center of each pineapple ring, and add a few extra cherries in the gaps for a fun, colorful touch (and maybe a sneaky snack!).
- Mix the Cake Batter: In a large bowl, mix the cake mix, pineapple juice (or water), oil, and eggs until smooth. My daughter loved taking turns stirring, though we did have a little spill—it’s all part of the fun!
- Pour and Bake: Pour the batter over the pineapple and cherries. Pop the pan into the oven and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- The Big Flip: Once the cake is baked and cooled slightly, it’s time for the flip! Place a heatproof plate over the pan and carefully turn it over to reveal your beautiful Pineapple Upside-Down Cake. Hold your breath for a moment… ta-da!
Our Fair Entry: The Good, the Bad, and the Delicious
We were thrilled to enter our cake at the local fair, imagining winning ribbons and framing the blue ribbon in recipe in our kitchen. Hey! We dream big in this house. However, opening night of the fair, we learned our cake didn’t place, not even an honorable mention.
But you know what? That’s okay. While we didn’t win a ribbon, we did create beautiful memories. My daughter and I had a great time baking together, and we were able to share our trial creations with family and friends, who all agreed it was tasty, fair win or not!
