Recipe: Grandma’s Zucchini Bread

My grandma makes fantastic zucchini bread, and this summer she finally shared the recipe with me! I adapted the recipe to lower the sugar content and entered the bread into the County Fair. I was delighted to have won  the red ribbon.

Grandma's Zucchni Recipe

Recipe makes 1 loaf.

  • 2 C Zucchini Puree
  • 1.5 C Flour
  • 1 C Truvia Or, 1 Cup Sugar
  • 1/2 C Sugar
  • 1 TBS Vanilla
  • 1 tsp Cinnamon
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 C Walnuts
  • 2 Eggs
  • 3/4 C Coconut Oil Or, 1 Cup Vegetable Oil


  1. Preheat oven to 325 degrees and spray a bread pan.

  2. Add all ingredients together in a bowl. Mix well.

  3. Pour mixture into bread pan.

  4. Bake for 1 hour.
