My grandma makes fantastic zucchini bread, and this summer she finally shared the recipe with me! I adapted the recipe to lower the sugar content and entered the bread into the County Fair. I was delighted to have won the red ribbon.
Grandma's Zucchni Recipe
Recipe makes 1 loaf.
Servings 13
Ingredients
- 2 C Zucchini Puree
- 1.5 C Flour
- 1 C Truvia Or, 1 Cup Sugar
- 1/2 C Sugar
- 1 TBS Vanilla
- 1 tsp Cinnamon
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 1/2 C Walnuts
- 2 Eggs
- 3/4 C Coconut Oil Or, 1 Cup Vegetable Oil
Instructions

Preheat oven to 325 degrees and spray a bread pan.

Add all ingredients together in a bowl. Mix well.

Pour mixture into bread pan.

Bake for 1 hour.
