I love to make desserts from scratch, but sometimes life gets in the way, and I need to use a… gasp… box mix! I adore Libby’s pumpkin bread mix; it’s been my secret weapon for fall baking for years. I trust Libby’s mixes because my dad has used Libby’s pumpkin puree to make his famous pumpkin pies since I was a little girl. At our house, it’s not Thanksgiving of fall without Libby’s.

My Chocolate Pumpkin Bread is a simple twist on Libby’s Pumpkin Bread. I follow the directions on the back of Libby’s box and then add half a bag of mini morsels into the batter before baking. Make sure you mix the bits into the dough well.

I always make my pumpkin bread in a vintage bundt pan that I’ve inherited. The bundt pan is one of my favorite baking pans. I feel like my pan connects me to my heritage and she’s filled with sweet memories of slices of bread and cakes from the past. And, let’s be honest they don’t make bundts like they used to!
