Thanksgiving always makes me think of pies. Pie crust cookies are the perfect solution for your holiday dessert table, and they are perfect size for snacking. These cookies are easy to bake and simple enough that the whole family can assist in making a batch. Each batch of a dozen cookies will take two crusts.

Pie cookies work best with fruit-based pie fillings.

Thanskgiving Pie Cookies
This is recipe is perfect for church dinners, family dinners and any time you are in the mood to celebrate.
Ingredients
- 1 Fruit Pie Filling
- 2 Pillsbury Pie Crust
- 1 Pie Crust Cutter or Fondant Cutter
- 1 Mason Jar Lid
- 1 Fork
Instructions

Preheat the oven to 350 degrees. Roll out pie crust sheets, and use the mason jar lid to cut out circles. After cutting the pie crusts into circles.

Place the circles in pairs. You'll use one circle for the bottom of the pie and the other for the pie cookie crust.

Stamp one circle from each set with the design of your choice and then set aside.

In the center of the other circle, place a spoon full of fruit pie filling.

Lay the stamped circle over with the filling. Then, crimp the rim of the cookie using the fork.

Bake for 25 minutes or until light brown.
